Fall is definitely here and with it comes the chance to make some of my favorite meals. We love soup at our house, so without further ado, here are a few of our favorites!

Chicken Enchilada Soup
In a large soup kettle, cook: 1.5 chicken breasts, chunked 1 med. onion, chopped Small bunch cilantro 2 T lime juice 2 tsp each chili powder & oregeno 1 tsp each cumin & black pepper 1/2 tsp paprika 2 cups chicken broth 2 cups milk of choice 2 cups water 3 cans beans (I use black and pinto) 1 can Ro-Tel 1 (6 oz) can tomato paste salt to taste Add the chicken broth, milk, water, beans, Ro-Tell, paste, and salt to kettel with cooked chicken, etc. Let simmer for at least ten minutes. Serve with brown rice, chips, sour cream and salsa. Cooked brown rice tortilla chips sour cream salsa
White Chili
Cook 1.5 pounds chicken breast with a mix of seasonings: salt, pepper, cumin, onion, garlice and lime juice. Save the strained broth for the soup. Add: 2 can Great Northern Beans 1 tsp cumin 1/2-3/4 cup salsa Verde salt and pepper to taste. Let simmer. Before serving add 1 cup cream. Serve with Monterry Jack cheese and tortilla chips. (The green salsa really makes this soup better than other white chilis. It has a little different flavor than green chilis and in my opinion it is way better than the green chili recipes.)
Chicken Fajita Soup
Marinate 4 chicken breasts with fajita seasoning and a bit of oil. Let sit anywhere from 15 minutes to overnight. 2 T oil 1/4 cup butter 1/2 cup onion, chopped 30 oz. chicken broth 1/3 cup Rotel 1.5 cups Monterry Jack cheese 1 cup processed cheese (or cheese of choice) 1.5 cups half and half Fry chicken in oil until juices run clear. Melt butter, add onion and cook until tender and slightly browned. Add Rotel and cheeses. Cook until cheese is melted, then add chicken chunks. (I use cornstarch to thicken at this point in the preperation.) Add the half and half. Heat through and serve over rice. Chips go well in this soup, also.

These sound good. We also like Zuppa ( sausage, potato, and kale soup). I have green tomatoes and a recipe from a friend. When I get it made, I will try the white chili you have here.

Oh, I love soups…broth soups loaded with veggies is my favourite though I love the other kinds too. Def make other kinds more often since my family doesn’t just love ones with lots of veggies. Loaded baked potato soup is a good one. Another favourite is easy chicken taco soup from saltandlavender.com and Mexican corn chowder. Gonna try adding salsa verde to my white chili next time! Salsa verde in white chili sounds good😋 We use black beans instead of Great Northern. My husband actually requests it now after telling me many times how much he does not like soup. I’ve discovered that, in his mind, soup = water based. Creamy soups are not in the same category🥳
Another one we love is Bacon Cheeseburger Soup. One of my favorites is Chicken Noodle Soup with homemade noodles (it’s water based…all the more for me😉). Beef Stew. Sausage Corn Chowder. Mmmm. Thinking about all these makes me even more ready for cooler weather ❄️
