Fall often brings cooking inspiration, and something about the change, the weather, the shift to indoors that I know is coming, makes me want to cook and bake more. I don’t consider myself much of a cook, but I knew there were a few recipes on So She Reads. I gathered them together and see that most of them are for the fall and winter months. Well, of course, that’s when the inspiration strikes.

Stuffed Peppers
I am planning to make stuffed peppers for supper. My husband picked up the peppers at a farm stand this morning and the meat is thawing in the sink. Stuffed peppers feel so very fallish to me, and I wonder if I may be the last cook to regularly make them. You don’t need a recipe, just the formula below, and they can go Italian or Mexican, my most favored directions, but I can imagine them Greek or Indian or even Asian without much effort. Since I have some leftover pizza sauce in the fridge, these will go Italian.
Stir together these ingredients in a big bowl:
browned ground meat, about a pound
some diced onion
tomatoes in some form, fresh or canned
chopped kale, spinach, optional, maybe zucchini
cooked grain, about a cup
salt and pepper
any other seasonings, depending on the cuisine you choose
grated cheese, sliced works too
bell peppers, any color
Preheat oven to 350 degrees. Cut bell peppers in half, leaving a half of the stem intact on both sides if you can. It’s pretty that way. You can also cut off the top and roast them will their own little lids on. Remove seeds and place in a baking dish. Stuff peppers with the meat mixture and sprinkle with cheese. Cover with foil and bake 30 minutes. Remove foil and bake an additional 10 – 15 minutes until cheese is bubbly and starting to brown.
